Understanding your espresso machine
To master your espresso machine, you must first familiarise yourself with it. Start by learning how it brews.
Types of espresso machines
Espresso machines fall into a spectrum of four categories, depending on the degree of automation they provide:
● Manual – With a manual espresso machine, the barista regulates every step of the process. You can identify manual machines by their horizontal lever.
● Semi-automatic – This is the type you’ll find most often in coffee shops. They allow the barista to begin and end the brewing process by pushing a button.
● Automatic – An automatic machine controls more of the process, especially when monitoring how much water enters each espresso shot.
● Super-automatic – The simplest brew process is from super-automatic machines. The barista only needs to add whole beans to the receptacle and press the start button.
Key pieces of an espresso machine
An espresso machine is a brilliantly designed appliance. Its core components include:
● Group head – The group head is where the tamped coffee meets the boiling water. It supports the final stage of the espresso brewing process.
● Portafilter – This is the handle that holds the filter basket. The portafilter resides inside the group head.
● Filter basket – Located within the portafilter, the filter basket is the metal basket that holds the ground coffee.
● Steam wand – When making lattes and cappuccinos, textured milk is key. The steam wand is a metal nozzle that pushes steam into milk, producing silky crema.
Preparing your espresso machine for use
Now that you know your way around your espresso machine, it’s time to take your first shot at brewing. To set up your espresso machine, be sure to:
1. Wash and dry all parts thoroughly
2. Soak filter in water for 5 minutes
3. Set filter to the current month and place in water tank
4. Fill water tank and place in machine
5. Add filter basket to the portafilter
6. Turn machine on and brew
Brewing the perfect espresso
To brew an impeccable espresso, choose your desired bean roast level (medium or dark roast are ideal for espresso), then follow these steps:
1. Grind your coffee beans – Add your beans to the coffee grinder and grind them to your desired coarseness.
2. Tamp your espresso grounds – Use the tamper to apply pressure evenly across the grounds. Or, use the self-tamping feature if your machine has one.
3. Extract the shot – For machines without timers, begin counting when the water first hits the grounds and aim for 25-30 seconds of extraction.
Troubleshooting flavour issues
Proper extraction brews great espresso for a cappuccino, latte, or whatever your drink of choice is.
If your espresso tastes too bitter, this means your brew process is extracting too much flavour from the grounds. To fix this, try using coarser grounds. Larger particles create additional channels for water flow.
On the other hand, if your coffee emerges with a sour taste, you’re likely under-extracting (leaving behind too much flavour). To correct under-extracted espresso, try to:
● Use finer grounds – Excessively large espresso grounds lead to insufficient contact between the water and coffee.
● Use more water – Too little water equals too little time to pull the desired flavours.
● Raise water temperature – Coffee compounds require sufficient heat to extract.
Regular maintenance and cleaning tips
For a healthy machine, keep it clean and well-maintained by:
● Wiping its components down after every use.
● Running water through the group head after every brew to remove lingering grounds.
● Scrubbing away milk residue from the steam wand after preparing frothed milk.
● Emptying and rinsing the drip tray daily.
Storing your espresso machine
Keep your machine and coffee accessories in prime condition by following these storage tips:
● Remove all grounds – Brush away all stray grounds, as these can spoil.
● Descale – To prevent limescale buildup, descale your coffee machine with a cleaning solution.
● Place in a temperate, dry environment – Moisture and cold can damage piping.
