This cool coffee pick-me-up brings the caffeine hit with a delicious berry buzz! A vibrant layer of fresh strawberry syrup topped with chilled milk and a double shot of iced espresso. It’s pretty as a picture and delicious to boot.

Ingredients


Measurements:

  • ice-cube icon
    Ice-cubes

    to serve

  • whole milk icon
    140 ml whole milk
  • double shot cold espresso icon
    Double shot cold espresso
  • strawberry icon
    Strawberry

    to garnish

For the strawberry syrup

  • strawberries icon
    250 g strawberries

    trimmed

  • granulated sugar icon
    100 g granulated sugar
  • drop almond extract icon
    3 drops almond extract
  • fresh lemon juice icon
    1 tbsp fresh lemon juice

Instructions

  • 1To make the strawberry syrup, place the strawberries, sugar, almond extract and lemon juice in a small saucepan over medium-low heat. Cook, stirring occasionally for approximately 30 minutes or until the strawberries have cooked down into a liquid. Remove from the heat and cool for 10 minutes. Strain into an airtight container or jar.
  • 2Spoon 2 tablespoons of the strawberry syrup into a tall serving glass, then top with ice. Carefully pour in the milk and finish with the cold espresso. Garnish with a fresh strawberry to serve.
    Tip: Store the remaining strawberry syrup in an airtight container in the fridge for up to 1 week. It's also great over ice cream.
