Measurements:

  • single cold espresso icon
    1 single cold espresso
  • iced water icon
    100 ml iced water
  • ice cube icon
    Ice cubes

    to serve

  • raw sugar icon
    Raw sugar

    to serve

  • cinnamon stick icon
    Cinnamon stick

    to garnish

For the coffee cream

  • whipping cream icon
    50 ml whipping cream
  • cold ristretto espresso icon
    1 cold ristretto espresso
  • light brown sugar icon
    15 g light brown sugar

Instructions

    To make the coffee cream, place the cream, ristretto and brown sugar in a jug. Whisk (or use a milk frother) until thick but still pouring consistency.

    Combine the cold espresso and water in a tall serving glass. Fill the glass with ice. Top with the coffee cream.

  • 3

    Sprinkle with raw sugar and use a blow torch to caramelise. Garnish with a cinnamon stick to serve.
