Ingredients


Measurements:

  • small brewed coffee shot icon
    150 ml small brewed coffee shot

    chilled

For the milky layer

  • white chocolate icon
    50 g white chocolate

    finely chopped

  • double cream icon
    15 ml double cream
  • whisky icon
    15 ml whisky

For the cream mixture

  • double cream icon
    60 ml double cream
  • coconut cream icon
    30 ml coconut cream
  • crème de menthe icon
    1 tsp crème de menthe

Instructions

  • 1To make the milky layer, place the white chocolate, cream and whisky in a small saucepan. Stir over medium-low heat until melted and combined. Transfer to an Irish coffee glass and allow to cool.
  • 2Meanwhile, to make the cream mixture, place the cream and coconut cream in a measuring jug. Whisk until thick but still pouring consistency, then whisk in the crème de menthe.
  • 3Once the milky layer has cooled, pour the chilled brew slowly into the glass over the back of a spoon, to prevent the layers mixing. Pour the crème de menthe mixture into the glass over the back of a spoon.
    Tip: The layers will become more defined on standing.
