Instructions

  • 1

Place the portafilter under the grind and tamp outlet. On the touchscreen, select Cold Brew. Press the grind icon. The machine will automatically dose and tamp.

  • 2

Once the grind and tamp is complete, place the portafilter under the group head. Place a cup under the portafilter. On the touchscreen, select Medium and tap the brew icon to begin extraction.

  • 3

Pour the cold brew into an ice cube tray and freeze until solid, for at least 4 hours.

  • 4

Once the cold brew ice cubes are frozen, place the portafilter under the grind and tamp outlet. On the touchscreen, select Cold Espresso. Press the grind icon. The machine will automatically dose and tamp.

  • 5

Once the grind and tamp is complete, place the portafilter under the group head. Place a cup under the portafilter. On the touchscreen, select Double and tap the brew icon to begin extraction.

  • 6

Check the extraction. The espresso should flow steadily and produce a rich, golden crema. If the shot runs too fast or too slow, adjust the grind size and re-extract.

Tip: If the extraction runs too slow or drips, the grind is too fine. If it runs too quickly, the grind is too coarse.
  • 7

To serve, place the cold brew ice cubes into a serving glass.

  • 8

Place the espresso, Aperol, simple syrup, gin and lemon juice in a cocktail shaker. Fill the shaker with ice and replace the lid. Shake vigorously until well combined and chilled.

  • 9

Strain the contents of the cocktail shaker over the cold brew ice cubes. Top with tonic water and garnish with a dried orange slice.
