To make the milky layer, place the white chocolate, cream and whiskey in a small saucepan. Stir over medium-low heat until melted and combined. Transfer to an Irish coffee glass and allow to cool.
Meanwhile, to make the cream mixture, place the cream and coconut cream in a measuring jug. Whisk until thick but still pouring consistency, then whisk in the crème de menthe.
Once the milky layer has cooled, pour the cold brew slowly into the glass over the back of a spoon, to prevent the layers mixing. Pour the crème de menthe mixture into the glass over the back of a spoon.
