Vanilla Blueberry Mug Cake with Cream Cheese Icing

Ingredients


Measurements:

  • vegetable oil icon
    2 tbsp vegetable oil
  • milk icon
    1 tbsp milk
  • egg yolk icon
    1 egg yolk
  • granulated sugar icon
    1 tbsp granulated sugar
  • vanilla extract icon
    1 tsp vanilla extract
  • plain flour icon
    ¼ cup (33 g) plain flour
  • baking powder icon
    ½ tsp baking powder
  • frozen or fresh blueberries icon
    ¼ cup frozen or fresh blueberries

Cream Cheese Icing

  • cream cheese icon
    2 tbsp cream cheese

    at room temperature

  • icing sugar icon
    1 tsp icing sugar

Instructions

  • 1Combine oil, milk, egg yolk, sugar, and vanilla in a small bowl. Add flour and baking powder and stir to combine. Gently fold in blueberries. Spoon batter into a 250ml ceramic mug and place mug on turntable.
  • 2Press Microwave, set to 100% power for 1 minute 30 seconds and press Start to begin cooking.
  • 3Make Cream Cheese Icing: Combine cream cheese and icing sugar in a small bowl and stir to combine.
  • 4Remove cake from microwave and allow to cool slightly. Serve cake warm, topped with Cream Cheese Frosting.
