Triple Chocolate Brownies with Salted Caramel Sauce

Measurements:

Brownies

  • dark chocolate (70% cocoa) icon
    60 g dark chocolate (70% cocoa)

    chopped

  • butter icon
    ½ cup (115 g) butter

    chopped

  • caster sugar icon
    1½ cups (150 g) caster sugar
  • large egg icon
    3 large eggs
  • vanilla extract icon
    1½ tsp vanilla extract
  • cocoa powder icon
    ½ cup (40 g) cocoa powder
  • plain flour icon
    ½ cup (65 g) plain flour
  • Coarse salt icon
    ¼ tsp Coarse salt
  • white chocolate chips icon
    85 g white chocolate chips
  • milk chocolate chips icon
    85 g milk chocolate chips

Salted caramel sauce

  • butter icon
    2 tbsp (30 g) butter

    chopped

  • light brown sugar icon
    ⅓ cup (65 g) light brown sugar
  • whipping cream icon
    3 tbsp (45 ml) whipping cream
  • vanilla extract icon
    1 tsp vanilla extract
  • sea salt flakes icon
    ½ tsp sea salt flakes

To serve

  • vanilla ice cream icon

Instructions

  • 1Line an 20cm square cake pan with parchment baking paper and lightly grease with cooking spray.
  • 2Place dark chocolate, butter and sugar into a large microwave-safe bowl. Press the Melt Chocolate shortcut, select 225g and press Start. Stir halfway through, when prompted. At the end of cooking, stir until smooth. Allow to cool for 10 minutes, then use a hand mixer to beat in the eggs, one at a time, followed by the vanilla.
  • 3Sift cocoa, flour, and salt together and gently fold into the mixture along with chocolate chips. Pour into the prepared pan and smooth the top.
  • 4Place trivet on turntable. Press Oven and set to 180°C for 45 minutes. Press Start to preheat oven. When preheat has completed, place pan on trivet and press Start to begin cooking.
  • 5Leave the brownies to cool in the pan. Meanwhile, make Salted Caramel Sauce.
  • 6Combine butter, sugar, cream and vanilla in a microwave-safe jug. Press Microwave and set to 80% for 1 minute. Press Start to begin cooking. Add salt and stir until butter is melted and sugar dissolved.
  • 7Press Microwave and set to 80% for 1 minute. Press Start to begin cooking. Stir the sauce and set aside to cool to room temperature.
  • 8Serve brownies with vanilla ice cream and Salted Caramel Sauce.
