Loaded Baked Potatoes
This is comfort food with a tech-savvy twist. The Breville Combi Wave 3 in 1 gets to show off its multiple functions, cooking crispy bacon and fluffy potatoes with a melting cheesy finish. Locked n' loaded, these are spuds with attitude.

Ingredients
Measurements:
4 bacon rashers
4 (280 g) russet potatoes
1 tbsp olive oil
Salt and freshly ground black pepper
½ cup (225 g) grated cheddar cheese
½ cup (115 g) soured cream
2 tbsp thinly sliced spring onions
Instructions
- 1Place bacon on a microwave-safe plate in a single layer and place on the turntable. Press Food Menu and select Cook, then Bacon, 4 slices. Press Start to begin cooking. When finished cooking, cool, chop and set aside.
- 2Press Oven and set 200°C for 50 minutes. Press Start to preheat oven.
- 3Pierce each potato 4-5 times with a fork or small knife, rub with olive oil and season with salt and pepper. Place potatoes in Combi Crisp pan and place in microwave in low position. Press Start to begin cooking.
- 4Allow the potatoes to cool for 5 minutes, then use a sharp knife to score the top of each potato. Push open and sprinkle with cheese.
- 5Press Microwave and set to 100% for 30 seconds. Press Start to begin cooking.
- 6Serve topped with soured cream, bacon and spring onions.
