Ingredients


Measurements:

  • caster sugar icon
    ½ cup (100 g) caster sugar
  • light brown sugar icon
    ½ cup (100 g) light brown sugar
  • natural yoghurt icon
    ½ cup (115 g) natural yoghurt
  • large egg icon
    2 large eggs
  • vegetable oil icon
    ⅓ cup (80 ml) vegetable oil
  • medium ripe banana icon
    3 medium ripe bananas

    mashed, plus 1 whole medium banana, peeled

  • plain flour icon
    1½ cups (195 g) plain flour
  • baking powder icon
    1½ tsp baking powder
  • bicarbonate of soda icon
    ½ tsp bicarbonate of soda
  • maple syrup icon
    1 tbsp maple syrup

Instructions

  • 1Line a 23cm x 13cm loaf pan with parchment baking paper and lightly grease with cooking spray.
  • 2Place sugars, yoghurt, eggs and oil in a large bowl and whisk to combine. Stir in mashed banana. Sift in flour, baking powder and bicarbonate of soda and stir to combine.
  • 3Pour the batter into the prepared loaf pan. Slice the remaining banana in half lengthwise and place cut-side up on the batter. Brush banana halves with maple syrup.
  • 4Place trivet on turntable. Press Oven and set 165°C for 1 hour 15 minutes. Press Start to preheat oven. When preheat has completed, place pan on trivet and press Start to begin cooking.
  • 5Cool the bread in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
