Mustard and Maple Marinade

  • olive oil icon
    1 tbsp olive oil
  • wholegrain mustard icon
    2 tsp wholegrain mustard
  • maple syrup icon
    2 tsp maple syrup
  • clove garlic icon
    1 clove garlic

    crushed

  • lemon zest icon
    1 tsp lemon zest
  • Coarse salt icon
    ½ tsp Coarse salt

Tea

  • chicken breast icon
    1 (225 g) chicken breast

    sliced into 1cm (3/8-inch) pieces

  • sweet potato icon
    170 g sweet potato

    peeled, sliced into 1cm (3/8-inch) rounds

  • chicken stock icon
    ¼ cup (60 ml) chicken stock
  • Salt and freshly ground black pepper icon
    Salt and freshly ground black pepper
  • tenderstem broccoli icon
    115 g tenderstem broccoli

    trimmed

To serve

  • lemon wedge icon

Instructions

  • 1Make Mustard and Maple Marinade: Place marinade ingredients in a medium bowl and whisk to combine. Add chicken and turn to coat. Set aside.
  • 2Place sweet potato slices on a microwave-safe plate. Season with salt and pepper and pour over the stock. Cover plate with vented lid or cling film and place on turntable. Press MICROWAVE and set to 100% for 5 minutes. Press Start to begin cooking.
  • 3Arrange chicken slices in a single layer over sweet potatoes and place tenderstem broccoli next to the chicken. Cover and place back on turntable. Press MICROWAVE and set to 100% for 4 minutes. Press Start to begin cooking.
  • 4Let stand for 2 minutes before serving.
