Air-Fried Garlic "Roast" Potatoes

Ingredients
Measurements:
1 kg desiree potatoespeeled, cut into 4cm pieces
(1½ litres) cold water
1 tbsp coarse salt
500 ml olive oil
3 cloves garlicpeeled, flattened
For the seasoning salt
1 tsp coarse salt
½ tsp sweet smoked paprika
½ tsp garlic powder

Place the potatoes in a large saucepan, add the water and salt, ensuring the potatoes are fully submerged. Bring to a boil over high heat, then reduce the heat to simmer. Cook for 25 minutes, or until the potatoes are tender but still hold their shape.

Place the air fry basket over the roasting pan. Using a slotted spoon, carefully remove the potatoes from the water and evenly space them in the air fry basket to dry and cool.

Pour the oil into a 30cm cast iron skillet.

Insert the wire rack into position 6. Place the skillet in the oven. Set the oven to Air fry, Super Convection, 200°C, for 5 minutes, enable Rotate Remind and press Start to preheat.

When the oven signals, very carefully slide the rack out, add the potatoes to the hot oil and cook for 35 minutes. When the Rotate Remind signals turn the potatoes, add the garlic and continue cooking. Meanwhile, prepare the seasoning salt.
Tip: You could also add some thyme, rosemary, sage or other herbs with the garlic, if you wish. - 6
To make the seasoning salt, place the salt, paprika and garlic powder in a small bowl and mix to combine.

The potatoes should be crisp and golden brown. If not, cook them a little longer.

Carefully remove the potatoes from the oil and place on a tray lined with paper towel.

Sprinkle the potatoes with the seasoning salt and toss to combine.
