Air-Fried Asparagus and Peas with Feta and Mint

The Joule oven air fries the asparagus until perfectly tender, then it’s finished off with grilling for a richer colour. Click on the Autopilot aeroplane symbol, check out your flight plan and the app will let you know when it’s ready. Throw in sweet green peas, some salty feta and a sprinkling of fresh mint for a winning warm salad combo. It makes a bright spring side dish for your celebration table or top with grilled fish or steak for a midweek dinner.

Measurements:

  • asparagus icon
    225 g asparagus
  • olive oil icon
    2 tbsp olive oil
  • coarse salt icon
    ½ tsp coarse salt
  • freshly ground black pepper icon
    Freshly ground black pepper

    to season

  • frozen peas icon
    ¾ cup (150 g) frozen peas
  • feta cheese icon
    115 g feta cheese

    crumbled

  • crushed red pepper flakes icon
    ½ tsp crushed red pepper flakes
  • lemon icon
    1 lemon
  • coarsely chopped mint icon
    2 tbsp coarsely chopped mint
  • extra virgin olive oil icon
    Extra virgin olive oil

    to serve

Instructions

    Insert the wire rack into position 4. Set the oven to Air Fry, Super Convection, 220°C, for 12 minutes, enable Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.

    Snap off the woody ends from the asparagus, then cut in half diagonally. Place in a large bowl.

    Add the olive oil, salt and pepper to the asparagus and toss to coat. Place in the foil-lined roasting tin and spread evenly. Add the frozen peas to the bowl and toss to lightly coat with the residual oil and seasoning. Set the peas aside.

    Place the feta and pepper flakes in a bowl. Finely grate the lemon zest over the feta and stir to combine.

    Once preheated, place the tin in the oven and air fry for 12 minutes. When the Rotate Remind signals, stir in the peas. When the oven signals at the end of cooking, stir in the feta mixture, adjust the oven to Grill, High, for 2 minutes and press Start.

    The asparagus should be tender. If not, broil a little longer.

    Tip: It may need a little more or a little less extra cooking time; best to keep an eye on it.

    Add the mint and toss to combine. Drizzle with extra virgin olive oil and serve.
