Spiced Manhattan Batch

  • rye whisky icon
    480 ml rye whisky
  • sweet vermouth icon
    240 ml sweet vermouth
  • Angostura bitters icon
    ½ tsp Angostura bitters
  • cinnamon stick icon
    1 cinnamon stick
  • black peppercorns icon
    5 black peppercorns

  • peel of orange icon
    ½ peel of orange

To Serve

  • Spiced Manhattan Batch icon
    75 ml Spiced Manhattan Batch
  • Luxardo cherry icon
    1 Luxardo cherry
  • orange peel icon
    1 orange peel

Instructions

  • 1Combine all the Spiced Manhattan Batch ingredients in a sous vide bag and vacuum seal it.
  • 2Set the HydroPro to 65.6°C and cook for 1hr.
  • 3Remove the bag from the water bath and place in an ice bath to slow the infusion. Cool completely.
  • 4Strain through a fine mesh sieve and store refrigerated.
  • 5To serve, pour 75 ml of the batched cocktail into a mixing glass and stir with ice.
  • 6Strain into a chilled coupe glass.
  • 7Garnish with a Luxardo cherry and flamed orange.
