Ingredients
Measurements:
Spiced Manhattan Batch
480 ml rye whisky
240 ml sweet vermouth
½ tsp Angostura bitters
1 cinnamon stick
5 black peppercornswhole
3 whole nutmeg
2 cloveswhole
1 star anisewhole
½ peel of orange
To Serve
75 ml Spiced Manhattan Batch
1 Luxardo cherry
1 orange peelflamed
Instructions

Combine all the Spiced Manhattan Batch ingredients in a sous vide bag and vacuum seal it.

Set the HydroPro to 65.6°C and cook for 1hr.

Remove the bag from the water bath and place in an ice bath to slow the infusion. Cool completely.

Strain through a fine mesh sieve and store refrigerated.

To serve, pour 75 ml of the batched cocktail into a mixing glass and stir with ice.

Strain into a chilled coupe glass.

Garnish with a Luxardo cherry and flamed orange.
