1Using kitchen twine, truss the roasting joint in 2cm intervals. Combine olive oil, salt and spices in a small bowl and rub all over the roast.
2Place the roast in the Combi Crisp pan and place it in the microwave in the low position. Press Food Menu and select Cook, then Beef, 1.4kg. Press Start to begin cooking.
3To make the chimichurri, combine all the ingredients in a small bowl, season with salt and set aside.
4Let the roast rest, covered, for 10 minutes before slicing and serving with the chimichurri.
