Insert the wire rack into position 7. Place the roasting pan on the rack so it sits beneath the basket to catch any drips during cooking. Place the air fry basket into rack position 3. Select Phase Cook for P1 and set the oven to Air Fry, Super Convection, 190°C, for 15 minutes. Press Start for P2, set the oven to Grill, High, for 4 minutes and press Start to preheat. Meanwhile, continue to the next step.
Place the wings on paper towels and pat dry to remove any excess moisture.
Place the milk powder, salt and oil in a large bowl and whisk to combine. Add the wings and mix to coat.
Once preheated, carefully place the wings in the basket, evenly spaced apart and air fry for 15 minutes, the oven will then switch to grill for 4 minutes. Meanwhile, continue to the next step.
To make the buffalo sauce, place all the ingredients in a large bowl and whisk to combine. Set aside.
To make the blue cheese sauce, place the blue cheese in a bowl, add the sour cream and mayonnaise and whisk to combine. Add the remaining sauce ingredients and whisk until well combined. Set aside.
The wings should be browned and cooked through. If not, cook them a little longer.
Remove the basket from the oven and transfer the wings to the buffalo sauce and turn to coat. Remove the roasting pan from the oven and discard the cooking juices. Return the wings and any sauce from the bowl to the roasting pan.
Move the wire rack to position 3. Place the pan in the oven. Set the oven to grill, High, for 3 minutes and press Start.
The wings should be caramelised. If not, grill them a little longer.
Stand the wings in the pan for 5 minutes to absorb some of the pan juices.
Crumble some blue cheese over the blue cheese sauce and serve the wings with the sauce and celery sticks.
